What is Pour Over Coffee?
Pour-over coffee is a manual brewing method that involves pouring hot water over coffee grounds in a filter. This process allows for greater control over factors such as water temperature, flow rate, and extraction time, resulting in a more customized and flavorful cup of coffee.
Here is a flexible brewing framework and recipe for making pour-over coffee.
What do I need to start?
- Kettle
- Grinder
- Digital Scale
- Timer
- Filter Paper
- Pour Over Dripper (eg. V60)
- Jug / Cup
Recipe
| Dosage | 13g ~ 30g. Adjust based on your preferred quantity. |
| Ratio | 1:16. (Every 1g of coffee to 16g of water.) |
| Grind size | Fine-Medium ~ Medium |
| Water temperature | 90 ~ 93 °C |
| Total brewing time | 2:45 ~ 3:30 min |
For ease of measurement, we will use 20g of coffee in our example:
20 g coffee : 320g water
Preparation
- Boil the water and rinse the filter paper in the dripper. Discard the water from the jug/cup. This step removes the paper taste of the filter.
- Grind fresh coffee beans to a medium-fine consistency.
- Weigh out the coffee dose.
- Place the dripper and the jug/cup on the scale and add the coffee dose into the dripper.
- Evenly distribute the coffee across the filter and tare the weighing scale.
Blooming
Blooming coffee is a technique used with pour-over methods, where the hot water is gently poured over freshly ground coffee to release trapped carbon dioxide before the full brewing process begins.
This process allows for better flavor extraction and prevents channeling, where water flows unevenly through the coffee grounds
- Start the timer and slowly pour 60g of hot water (3 x coffee weight) in a circular motion, ensuring that all the grounds are saturated.
- Bloom for 30 seconds. Allow the coffee to drip through the filter and adjust the pouring speed as needed.
Brewing
- After the bloom, pour in 130g of hot water, and after 1 minute, add in the remaining 130g of water.
- Aim to finish the brewing process around 2.15 to 3.15 mins.
The recipe may be adapted for different types of roast and also to your personal preferences. Try it in different ways to find out what works for your favorite coffee at home.
Mastering pour-over coffee takes patience and practice, but the rewards are truly satisfying. By learning the key principles and refining your technique, you can brew a flavorful, personalised cup every time.
