Finca El Tarro
El Salvador is celebrated for coffees with distinctive flavor and aroma, and Finca El Tarro is no exception. Nestled at 1,400 MASL near the village of Ataco, this small farm is part of a region renowned for producing exceptional Pacamara—coffees known for their sweetness and balance. The farm’s name, El Tarro (“The Jar”), was inspired by the honey-like sweetness of its fruit, reminiscent of the honey once collected and stored in jars.
The farm is owned and managed by Carlos Mendez and his family, who operate several estates between Apaneca and Ataco in the Ahuachapán region at altitudes ranging from 1,200 to 1,600 MASL. Their coffees have earned international recognition, including multiple Cup of Excellence awards.
The Mendez family cultivates a wide variety of coffee, including Pacamara, Pacas, Geisha, Bourbon, Cuscatleco, and Centroamericano, all grown under the shade of native trees to support biodiversity. Sustainability is central to their approach, with recent initiatives focused on rainwater collection and distribution.
Carlos himself is deeply engaged in the production process, with a strong passion for processing and fermentation. At Finca El Tarro, he produces natural, honey, and washed coffees, as well as experimental hybrid processes—each showcasing the family’s dedication to quality and innovation.
